New Menus at The Lighthouse Restaurant

At Baros Maldives, we always seek to provide memorable experiences for our guests, and in light of this practice, we are delighted to introduce our new and exciting a la carte menu and two new degustation menus at the charismatic Lighthouse Restaurant.

Foodies and romantics can indulge in modern fine dining at the beautiful overwater Lighthouse Restaurant, easily recognisable by its, white sail architecture. It appears to float in the calm turquoise lagoon while lionfish and moray eels circle its depths in a predatory fashion at night.

The new menus present a sensory tasting experience. The ‘Discover’ degustation menu highlights the Foie Gras – a delicious pairing of nori poached duck liver with pistachio, cacao, fruit gastrique, brioche and acai berry and complemented by Yalumba Y Series 2020 Chardonnay from South Australia. The pan seared Kobe main course is another standout dish served with potato and truffle purée, seasonal baby vegetables, crispy kale, and a barbeque Jack Daniel jus. This delicious fish dish is paired with a 2019 Kanonkop Kadette Cape Blend from Stellenbosch, South Africa.

A main feature of the ‘Experience’ degustation menu is the Duck main course – a masterpiece of sunchoke and apple textures, seasonal fruit gastrique, shallots, celery vierge, and hazelnuts which is then finished with Khmer Kampot pepper and date juice.

A highlight of the à la carte ‘Ocean’ menu is our signature flambé dishes – the cognac flambéed Lobster Bisque is served with a coconut cream and the Pastis Flambé Tuna or Black Cod Belly accompanied by sweet potato textures and curry leaves is glazed with a traditional Maldivian Rihaakuru jus which is a spicy tuna based sauce.

For the ultimate ‘farm’ experience, the Iberico Pluma (pork loin) is marinated with Hawaii black salt and buttered toast and is served with beluga lentil risotto and finished with verde blu di bufala cheese, celeriac textures and a tasty barbeque and kombu jus.

Fine dining is not something you do every day – it is something to be savoured and shared. Our degustation menus are especially designed to give our valued guests a taste of diverse, exquisitely prepared dishes presented in small portions – like little love bites.
